2 cloves of garlic

1 medium onion chopped

6 bell peppers

1 pound of ground beef

½ cup of rice (uncooked)

1 14.5 oz can of diced tomatoes (I prefer the Italian style)

2 8 oz cans of tomato sauce (I prefer the garlic and basil)

1 cup of Parmesan cheese

1 tablespoon of Italian Seasoning

2 tablespoons of Worcestershire Sauce

1 tablespoon of olive oil

1. Preheat oven to 375 degrees

2. Cook rice according to package directions

3. Saute garlic and onion in olive oil until onions are translucent

4. Add ground beef and Italian Seasoning to onions and garlic

    a. Once brown drain off any excess fat and return to the pan

5. Add diced tomatoes, 1 can of tomato sauce, cooked rice, ½ a cup of Parmesan cheese, and Worcestershire sauce to the beef mixture

6. Cut the tops off of the bell peppers, remove any seeds and ribs from inside and discard

7. Fill the bell peppers with the beef and rice mixture and place in a baking dish

8. Pour the remaining can of tomato sauce over the peppers

9. Bake for 55 minutes at 375 degrees

10. Top with the remaining cheese and bake 5 minutes more or until melted

Let stand 5 to 10 minutes before serving

This recipe is simple and nutritious.  It can be made the night before and put in the oven the next day for an easy family supper.  Other vegetables can be used instead of the bell peppers, including zucchini.  Simply reduce the bake time (bake until tender).
